Ascorbyl Palmitate known as Vitamin C Ester, is the oil soluble form of Vitamin C. Because it is oil soluble, and nonacid, it is much more stable than the water soluble form of Vitamin C,  L Ascorbic Acid, hence,  it can be used freely in formulation without the oxidation that turns products brown.

Ascorbyl Palmitate is one of the most stable forms of vitamin C to use in formulation, Although the most stable form would the encapsulated form, such as Liposome C, which is the Ascorbyl Palmitate surrounded by a phospholipid membrane which protects it while allowing enhanced transport into the tissues  and makes it also water soluble.
